Indian Shrimp and Spinach~One Pan Meal

One Pan?
You betcha!

The sauce this meal makes will have you drooling 
and maybe even wishing for a crusty piece of bread to sop it up with.
If you can refrain from that this meal is Paleo/Whole 30 baby!

Ingredients:
2 shallots thinly sliced
3 cloves of garlic minced
1 cardamom pod 
1/4 teaspoon turmeric
salt and peper to taste
2 tablespoons light olive oil
1 pound of shrimp (deveined, tail on)
1 bag or 4 cups of spinach

In a large pan heat the olive oil over medium heat. Add the shallots, garlic and cardamom pod and sautĂ©  till the shallots are soft and garlic is golden. Next, add the turmeric and combine till fragrant about 30 seconds. Remove the cardamom pod from the pan and toss in the shrimp. Cook till the shrimp are nearly done, then add the spinach and cover with a lid. Give the pan a good shake (with lid on) to cover the spinach with the sauce. Lower the heat to almost the off setting and let the spinach cook down for 5 or so minutes. Salt and pepper the dish to taste and serve piping hot!

  1. There are bags of shrimp in the freezer and spinach that needs to be cut in the green house, guess what we are having for dinner tonight?! Thanks ko, my Mike is going to love this.

  3. bless your soul! the worst part of this whole 30 business is the 'what's for dinner' dilemma....now i know! will report back...and it might be good with a bit of coconut milk thrown in too!
