Indian Rice Pudding

Y'all don't be afraid of this! It was beyond good and the little pan has been completely devoured, I may just make it again tomorrow. It's the perfect way to use up some leftover rice!
1 can coconut milk
2 cups whole milk
2 cups cooked basmati rice
1/2 cup diced dried apricots
1/4 cup sugar
1/4 teaspoon ground cardamom
1 teaspoon vanilla
A handfull of chopped salted pistachios for garnish

Simmer the whole milk and rice on the stove top until thickened, about 10 minutes. Add the coconut milk, sugar, cardamom and vanilla, stirring often and simmer another 10 minutes or until thickend. Remove from heat and stir in the dried apricots. Pour into a dish or individual cups and garnish with the pistachios. Serve at room temperature or chilled (my favorite). Enjoy!
