Oh, Valentine's Day.....it sneaks up on me every year.
The lovey dovey holiday is sandwiched between
two birthdays, my Mother-in-love's and my littlest man's!
Add in school parties and I'm usually frazzled and on a slight sugar high!
Ha!
This year I'm staying ahead of the game,
simplifying life.
Its all about the small stuff, little acts of love and microwave toffee!
Yes, people!
One bowl, one microwave, glorious toffee!!!
Ingredients:
1 cup sugar
1/2 cup light corn syrup
1 pinch of salt
1 tablespoon of butter
1 teaspoon of vanilla
1 teaspoon of baking soda (the fresher the better)
Semi sweet chocolate for dipping
Sea salt for sprinkling
Directions:
Tape a large piece of parchment paper down on the counter and make sure your hot pads are close by, the bowl will be very hot. Combine the sugar, corn syrup and salt in a glass (microwavable) bowl. Heat on high for 5-6 minutes. The mixture should be bubbly and a slight caramel color. Add the butter and vanilla and heat for another 1-2 minutes. Quickly stir in the baking soda, just until the mixture is foamy. Immediately pour onto the parchment paper. Let cool for 15 minutes or until set. Break into pieces and then dip in chocolate and sprinkle with sea salt.
*The cooking times may need to be adjusted based on the wattage of your microwave. Each house we move to I have to tinker with the cook time. But the end result is soooo worth it!

Oh Tracey! I feel ya! I actually took these pictures back at Christmastime, but they looked so Valentine's Day(ish) that I saved the post for a later date. Yesterday I told myself I should retest the recipe....but my willpower prevailed ;) Happy weekending to you!
